In 1942 Don Julio Gonzales began making hand-crafted tequilas. Today he still produces small batches only from fully-matured, perfectly ripened (7-10 years) agave plants that can be found exclusively in the highland region. This is the same process he has used since 1942. Only the body of the agave is used. The tail and head are discarded. This long tradition of attention to both cultivating and distilling processes result in this tequila being recognized as the #1 ultra-premium tequila in Mexico.
