As with the classic French wines of Sauternes, this wine is a blend of Sauvignon Blanc and Semillon and has been affected by the famed Botrytus "Noble Rot". This rare wine is luscious and sweet and will turn a golden yellow over time. The flavor is intense and will become more complex with age.
Alfasi wines benefit from the rare joining of sunny climates and cool ocean breezes. The surrounding mountain ranges provide a cool, moisture-free climate that contributes to the top-quality that Alfasi wines exhibit. The acidity is firm enough so that the wine can be enjoyed with rich white meat and fish dishes as well as desert.
