Pascal Beillevaire is the cheese master for a company that sells French cheeses all around the world. He is the son of a farmer and at a very early age, he had his own store where he sold products that his family's farm produced.  Today he owns a large dairy that focuses on cheese.  At his farm, he stores cheeses from all over France, which go through the aging process there.
