All these localities, facing South-East, lay on marly and chalky scree slopes.
|
The stony soil holds the heat of the sun to release it on the grapes, speeding up their maturation.
These natural privileges contribute to the structure of the wine and to the complexity of its nose, enhancing its aromas, whereas climatic conditions confer the ageing ability. The slope, often steep, avoids excess of humidity and eases draining.
Quality grape varieties, voluntary yield control, 100% hand-picking, strict vinification of each appellation and careful ageing in oak casks are required, each year, to allow the consumer to appreciate wines reflecting their individual terroir and vintage. |

To help you form your personal opinion, may we add that :
The Bourgogne Passetoutgrain is a supple wine, maturing quickly.
The Premier Crus from our estate are pleasant to drink early, show a good balance body/fruit, always ensuring their elegance.
The Champans, Fremiet, Cailleret are greater wines, "head of cuvées", and deserve to age in your cellars to attain full maturity.
The Clos des Ducs is a Great Wine, of slower evolution. Its structure is complex and harmonious.
