Junmai means 'pure Sake', containing nothing but water, rice and Koji; absolutely no brewer s alcohol added. US prohibits import of alcohol spiked Sake, meaning, all import Sake available today are pure, brewed Sake. Junmai Shu are usually a bit heavier and fuller in flavor than other types of Sake, and often the acidity is higher.
