This is a rich, sweet Gorgonzola with a very sharp finish. Its aroma is stronger than regular dry Gorgonzola and its flavor is a bit stronger. It is often made into a torta with mascarpone. But it is a beautiful cheese served with just some crunchy Italian bread and a nice big red wine. It's also lovely blended into a bowl of hot fresh pasta. Allow this cheese to come to room temperature and it will spread like soft butter.
