In Soliera, Province of Modena, in the rich, alluvial zone of Lambrusco di Sorbara, the Maletti family has been producing quality Traditional Balsamic Vinegar (Aceto Balsamico Tradizionale) for generations. Notwithstanding their success, young Davide Maletti has decided to blaze a new path for his family, producing an excellent six-year Balsamic Vinegar of Modena from the wine and grape musts of selected Lambrusco and Trebbiano varietals. The reason why so many tasters misjudge Maletti as being a 10-, 12-, or even a 15-year Balsamic isn’t just that it is made from carefully chosen basic ingredients without additives or enhancers of any kind. It is also due to the innovative manner in which the vinegar is aged, undergoing an accelerated yet regulated evaporation in former wine barrels of French Allier oak. This six-year process results in a Balsamic with extraordinary density, aromaticity, and depth of flavor as well as a clean, delicate finish that belies its age and modest price.
