Now Viewing: Caciocavallo Cheese

Caciocavallo means "cheese on horseback". This is spun paste (string) cheese, piquant. Good for cooking or frying or grilling. This cheese dates back to the 14th century, and believed by some to have originally been made from mare's milk. Today's caciocavallo comes from cow's milk and has a mild, slightly salty flavor and firm, smooth texture when young (about 2 months). As it ages, the flavor becomes more pungent and the texture more granular, making it ideal for grating. Caciocavallo is one of the pasta filata types of cheeses (Provolone and Mozzarella), which means it has been stretched and shaped by hand. It may be purchased plain or smoked and comes in string-tied gourd or spindle shapes. Our cheese is made from the highest quality, fresh Guernsey milk in our family cheese plant. Made weekly for the freshest flavor, then vacuum packed to protect owned and operated and keep its freshness. Our cheese is hand-formed and contain all natural ingredients with no preservatives. This near white, semi-firm cheese has a mild, creamy, delicate flavor. This cheese grates nicely when allowed to age. As an appertif, with a little warm olive oil and fresh ground pepper, it is fantanstico! Each head (pkg) is approximately 12 oz.
