Now Viewing: Lucques Olives

Lucques olives are elongated, crescent shaped and of average thickness. Their skin is fine, smooth and light green until the beginning of maturity. When the olive matures, it turns to a glossy black colour. Lucques olives are originally from Italy, but are now most closely associated with France and they're unlike any other olive you're likely to sample, free or otherwise. Grown in the Hérault region in the south of France, the Languedoc, they're harvested in the fall and can be difficult to find depending on the time of the year. These olives are meaty and sweet, not soft, salty, or mushy like some olives can be. The green flesh is firm and bright, and the olives themselves must be kept submerged in their light brine since they discolor very easily. In France, the Lucques olives are mainly found in Roussillon and Hérault. The fruit is handpicked from half August until half October for pickling (green fruit). It arrives at full maturity between the end of october and the 20th of november (black fruit) and it is then harvested for oil extraction with combs and nets. This olive has a small crescent-shaped stone, clear crunchy flesh, with an incredibly soft flavour with tastes of fresh almonds and avocados. Gourmets consider it as the best of all.
