A firm pasteurized cow’s milk cheese made from Friesian cow’s milk in County Limerick, Ireland. It is an Irish cheddar flavored with an Irish Porter (much like Guinness) made by the cheese makers Dave and Marion Cahill on their farm. The cheese is hand made using vegetarian rennet. This cheese is very aesthetically pleasing due to the marbling effect created by the infusion of the Porter. It has the taste of a cheddar with a meaty texture and carries notes of malt. This is a great cheese to turn an ordinary sandwich into an event. Pair with your favorite Irish Porter and cured meats.
