Product Information:
Carmody is named for the street where the cheesemaking Callahan family lives. 100% raw jersey cow's milk adds a creamy depth to the cheese. The small 3-4 pound wheels have a thin, firm yellow rind and are aged at Bellwether for up to 2 months. Naturally golden in color with a smooth texture and wonderful flavor, carmody is a consistent blue ribbon winner at the Los Angeles County Fair.
