Product Information:
Traditionally, the speck should be ready to eat in the spring. Then it is time to start working in the fields, in the forest and in the mountains and there must be a good piece of bacon in the rucksack. This is the time to enjoy the fruits of winter’s long labour. The most exciting moment has come when the fine layer of mould has been carefully removed and the bacon is cut for the first time. It should be firm and of even texture with an aromatic scent, the lean meat should be dark red and the fat firm and white. Cut in thin slices or strips, traditionally by hand, it should be tender and easy to chew. Its flavour should be mild and well balanced without any single spice being too dominant. In Alto Adige speck has always been considered good and healthy food for young and old and the noble city dweller enjoyed it just as much as the simple farmer.
