This classic cow's milk cheese from Burgundy has been made in the small town of Epoisses since the late 1700s. Epoisses is washed with brine for several weeks then finished with wine or brandy. With an orange-rust colored surface and an off-white milky interior, this cheese is bound to thrill the strong cheese lover. The texture is smooth and silky with an extreme pungency to the taste. When ripe, Epoisses is known to run right off your spoon. We are currently carrying the mini Epoisses, the regular size, and the larger size known as the Coupe. Pair with a Chardonnay for a classic French evening.
