Bittersweet Chocolate has been credited with all kinds of positive health effects from reducing heart disease to fighting cancer. But the smartest of us know that it is really just a luxurious treat for the discriminating palate. At 73.5%, El Rey's Apamate Bittersweet Dark Chocolate Bar adds a little extra cacao butter to El Rey's Gran Saman chocolate for a smoother texture. Paradoxically, it has a smoother texture and milder taste than the 70% bar. El Rey ("The King") Apamate 73.5% Bittersweet Dark Chocolate Bars are made exclusively with the Carenerao Superior cacao bean from the Barlovento region of Venezuela. The Carenero Superior is a rich, flavorful criollo cacao bean, wiht a more complex yet milder flavor than the forestero beans that make up the majority of chocolate. The name given to this chocolate - Apamate - is one of the trees that have traditionally shaded cacao planted in the Barlovento region of Venezuela since the 1600s.
