It is a genetically pure criollo bean, called “Porcelana” because of the translucent white color of the bean, which produces a very clear chocolate, 70% fondant. It has a decisive flavor of roasted almonds, which alternates, with hints of olive oil as in a hard-working oil mill. A unique experience, a flavor which lingers, long and persistent. This is an intense chocolate of extraordinary strength but at the same time with a tantalizing delicacy, and with an acidity which imparts freshness, leaving the mouth completely clean and immediately wanting to try some more. Suggested wine, spirit pairings: Champagne Demi-Sec or Madera 10 year.
