Ohyama translates to: "Big Mountain". This is highly valued. Junmai (pure brewed) is 70% Tokubetsu Junmai. Smooth flavors enhance the taste. Well-blanced with creamy aroma and a spicy taste. Junmai translates literally to "pure rice"-- these sakes are brewed using only rice, water, koji and yeast; no alcohol is added. Tokubetsu is usually seen accompanying "Junmai" and means "special." It designates sake made from rice milled to 65% or less of its volume. Very interesting appearance; it’s not all that cloudy and doesn't show a thick, white, milky sediment, but rather a very finely ground up residue, leading to a more diaphanous robe of opal. Still some clarity on the edges. Very light film of bubbles on the surface and excellent legs left behind. Semi-sweet nose is more spicy and citric for a nigori. Not all the rich, chewy coconut/pina-colada notes (though there is still some of it). Perfume and passion fruit, with a dry, almost tangerine-like fruitiness and lemon seed acidity. Soft vanilla blossom and very minimal honey notes arrive on the finish, which is dotted with white pepper and carries a good strength. Alcohol is very well masked for its strength between 14 and 14.9%. Very refined, which completely redefined the style. This nigori is very close to any other high quality, filtered sake. The flavor follows suit, with a soft mouthfeel that isn't thick and chewy, but rather more fluid and full. Pineapple, tangerine, passion fruit, and light melon sit on the palate, with some light vanilla and moderate acidity for a finish. Surprisingly floral and delicate for its unfiltered nature. Very well concealed alcohol. Delicious stuff.
