Fra' Mani Handcrafted Salumi is a new company based in Berkeley, California, founded by nationally-recognized chef Paul Bertolli.Fra’ Mani dry salumi are made from the finest-quality fresh pork and natural hog casings. Hand tied with natural twine, mold ripened, and slowly aged. Salame Rosa is a cooked salame with origins in Bologne. It is similar in size to Mortadella and seasoned with coriander, white pepper, mace and studded with pistachios. No added nitrites.
