Tibvrtini Aceto di Vino Bianco POFI is made from Malvasia and Grego grapes, hand harvested and organically grown by the Fratelli Pofi. Generations of the Pofi family have perfected their wine making techniques and overseen the miraculous natural conversion of wine to vinegar that takes place as a part of the wine making process. These choice grapes, grown exclusively in the small and particular wine growing region of Zagarolo in Lazio, give this unfiltered vinegar its distinctive and complex flavor - an unusual blend of the sweet Malvasia and crisp Greco varieties, a blend that the Pofi's proudly claim as their family invention. The Malvasia lends sweet and aromatic almond and apricot qualities and the Greco punctuates this with its smoky and toasted nut characteristics. Aged in castagna or chestnut wood barrels for at least one year, the wood characteristic to the Lazio area contributes to the composition of the aroma and flavor. The Tibvrtini Aceto di Vino Bianco POFI has an initial crisp bite that unfolds into a sequence of tastes lent by the unique fruit and wood aging concluding with a silky, smooth finish.
