The raspberries, picked on the hills in the months of July and August when they are perfectly ripe, are crushed and left to ferment naturally. After being left to stand for a while, clear balsamic vinegar, aged in oak barrels, is added for the final stage of transformation. The result is a bright red, intensely fragrant raspberry vinegar.
