The 2005 Cabernet Sauvignon Estate, which was actually a short crop on Spring Mountain, is an 18-barrel composite blend with every lot represented proportionally. It is a classic, elegant effort, perhaps not as extroverted and intense as some of Togni’s riper vintages, but offering a beautiful dark ruby/purple color as well as hints of menthol, tapenade, licorice, blackberry, and cassis. Like many top 2005s, it smells terrific, although there may not be as much fat and succulence as are found in most top California Cabernets.
