Foie Gras (Fwah Grah), French for "fat liver" is a world famous delicacy which is obtained from ducks or geese. The Egyptians discovered centuries ago that geese would over feed themselves before migrating to warmer countries. Their livers were acting as a "food tank" releasing proteins as needed during their long journey. This natural phenomenon evolved through the years and through the Greek and Roman civilization. Today, ducks and geese are farm-raised in many countries to produce "Foie Gras". The lobes of Foie Gras can be fresh or frozen, grade A,B or C. Also available: duck foie gras terrine (mi-cuit), block of duck foie gras and duck foie gras mousse - fully cooked and ready to enjoy. Bon appétit.
