Winemaker's notes: This spumante is made from Prosecco grapes grown on the hillsides of Conegliano and Valdobbiadene, which are then vinified before the resultant wine undergoes bottle fermentation, all under the watchful eye of Rabbi Shalom Elmaleh. This smooth, delicate and highly refined spumante has a characteristically fruity, floral bouquet and displays an abundance of evanescent bubbles against a luminous, brilliant backdrop. Extremely elegant yet intense, it is at its best when served at a temperature of between 6 and 8°C. It is excellent as an aperitif, but also works very well as an accompaniment to pastries and fruit-based deserts.
