Product Information: Winemaker's notes: "Aromatics of white blossoms, elderflower, guava and yeast, backed by chalky flint-like notes with a little brininess reminiscent of the sea. Palate of tangerine rind, lemon, green apple and kiwi flavors anchored by a minerality. Tarty and racy, my personal favorite with raw oysters." Nick Stez Cyrus Restaurant's Erika Frey's "Strawberry Fields" cocktail: In a mixing glass, muddle 5 leaves of fresh mint, and 1 large ripe strawberry. Add: 1 oz Plymouth Gin ½ oz Dolin Blanc Vermouth ¾ oz Woodenhead French Colombard ¾ Fresh Squeezed Lemon Juice ½ oz Lavendar Honey Ice Shake well and strain into a martini glass. Top with Champagne Foam and Strawberry Powder. Champagne Foam: Mix together with a hand blender – 1 egg white 1 oz Champagne or Sparkling wine ¼ oz Lemon Juice ¼ oz Lavendar Honey Put mixture into a whip cream canister and charge with Whip-Its. Strawberry Powder: Freeze-dried strawberries frozen with liquid nitrogen. (At home, a hand-grinder can be used in the absence of liquid nitrogen) Sprinkle on top of Champagne foam. | ||||
