From the Murcia region in Spain, this is a pasteurized goat’s milk cheese is protected by the government issued D.O.P. status. The Drunken Goat is soaked in Doble Pasta red wine for 48-72 hours before being aged for 75 days. The paste is medium-firm and leans toward the sweeter side of the goat milk profile.
