Product Information: Murcia is a mountainous region filled with orchards in the southeastern area of Spain. There you will find Lorenzo Abellan's farm with his sheep and goats. After studying in France learning the methods of Bucheron cheese creation Lorenzo began making Spain's first versions of the bloomy rind goat's milk cheese. He makes Cana De Oveja using his sheep's milk and he makes Cana De Cabra using his Goat's milk. Cana, meaning stick in Spanish, comes in a short log that once cut open becomes an amazing aesthetic for any cheeseplate. Both cheeses are designed to ripen from the outside in so you get a very creamy texture just underneath the rind with a thicker paste in the middle. I have long thought of these cheeses as having a magic ability to time-release flavors the longer they sit in your mouth. The rind has a strong spiciness, followed by the powerfully pungent oozy creamline and finishing with a buttery taste from the center of the log. * We consider cheese to be a perishable item which requires next-day shipping.
