Product Information: Jack cheese was originally made in Monterey, California by Mexican Franciscan friars throughout the 19th century without receiving much attention. It wasn’t until around 1916 that a Scotsman, by the name of David Jacks, became aware of the recipe and began to mass market it as Jacks Cheese. The name eventually evolved to Monterey Jack; the name we know today. Jack style cheese became wildly popular and many cheesemakers started to make their own variations. One such example is the Vella Dry Jack. This cheese was initially developed by Tom Vella during WWII. The Sonoma County company was eventually taken over by his son, Ig Vella, who continues to make the cheese that made his family famous. It is a hard, dry, pasteurized cow’s milk cheese that is aged for nine months and coated in cocoa, oil, and black pepper. The taste is reminiscent of Parmigiano-Reggiano but with a sweet caramel like finish.
