For the sweeter cuts of lamb such as cutlets, leg and sweetbreads, a medium-bodied red bordeaux or claret-style red will work well. For good quality claret, you have to be prepared to spend a bit, and the merlot-based 1999 Château Haut-Larriveau, Fronsac, justifies its price with a blend from vineyards bordering on St-Emilion with refined cassis flavours, seamless oak and gentle acidity. |
