The Beauty of Wally's Wood Oven

If there’s a way to make a dish taste even better, we’re on it. That’s why Wally’s invested in high-quality wood ovens to make great-tasting pizzas, veggies, and more. Here’s some background on why we value our wood oven so much and what it produces for our guests.

Why Wood?

While gas ovens are more commonly found in kitchens, wood ovens are a wonderful option because they can generate higher heat. At Wally’s, our wood oven produces heat up to 700 degrees Fahrenheit, which is perfect for pizza, veggies, and other dishes. Plus, as opposed to gas heat, that wood oven heat is dry. This allows ingredients to cook quickly without becoming soggy.

Superior Results

When we cook with wood fire instead of gas, the high heat allows the outside of the ingredients to cook quickly, while the inside cooks more slowly. This produces a crispy, flavorful outside with a soft and tender inside. Fast cooking boosts the flavor and enhances the taste of the ingredients, such as tenderizing vegetables without overcooking them, and melting cheese quickly without burning. And at Wally’s we use a mix of mesquite and almond wood, which lends a delicious smokey, charred flavor to the dish. Overall, everything tastes much better!

What We Cook In It

We love using our wood oven because its benefits can enhance a range of dishes, from dough to fish. Here are some things to order at Wally’s to taste the difference yourself:

  • Pizza: From spicy salami to buffalo mozzarella, our handmade pizzas are delicious thanks in part to our wood oven.
  • Roasted vegetables: High heat allows them to cook just the right amount and maintain their nutrients and flavor.
  • French Sea Bass: Enjoy a perfectly crispy skin with a soft, juicy inside.
  • Baked Brie: We serve it with a crispy, crunchy outside and a soft inside filled with melty cheese.
  • French Toast: Perfected with a browned outer crust and a pudding-like center.
