2017 Alain Graillot Crozes-Hermitagel

Wally's Price: $35

Perhaps the best estate focusing on world-class Syrah in Crozes-Hermitage, Alain Graillot delivers what I expect from a classic Northern Rhone red: juicy fruits, black pepper spice, and a hint of smoke that gives these wines a wild extra dimension. The 2017 is drinking beautifully now but for those with patience, it will only continue to improve with age in bottle. An ideal match for aged cheeses, vegetables braised with bacon, or a Mediterranean-style lamb burger."
-Robert Vardanian: Wine Director, Wally’s Santa Monica

" The 2017 Crozes-Hermitage is a classic Crozes that shines for its complexity as well as texture. Complex notes of ripe black fruits, olives, spring flowers, and pepper all emerge from the glass, and it hits the palate with medium-bodied richness, bright acidity, and building tannins, all of which give the wine a firm, age-worthy feel. It's got plenty of fruit and will benefit from 2-4 years of bottle age and keep for over a decade. Lovers of impeccably made, old school Northern Rhône Syrah can't go wrong with a case of this. "

2016 The Hilt Chardonnay Cuvée Fleur

Wally's Price: $45

"A beautiful Chardonnay hailing from the Santa Rita Hills. The fruit comes from the legendary vineyards of Sanford & Benedict, Radian, and Solomon Hills. 40% new oak with a touch of steel makes for a balanced delicious Chardonnay."
-Elias Cuevas: Sommelier, Wally’s Santa Monica

"Offers an attractive combination of bright citrus and floral flavors with a soft, supple texture that will provide plenty of near-term pleasure. The 2014 was aged mostly in barrel (40% new), with a touch of stainless steel. Vineyard sources are Sanford & Benedict, Radian and Solomon Hills."

2017 Olivier Leflaive Chassagne-Montrachet

Wally's Price: $125

"This fleshy and powerful Chardonnay from a famed village in the heart of Burgundy is a such a treat. Maison Olivier Leflaive is known for their precision and elegance, which is amply evident in this bottling. I love how all the elements come together. The luscious palate is balanced by fresh acidity, while the concentrated aromas of white fruits, acacia, and spices are accented by pleasant hazelnut finish. "
-Sunhee Park: Sommelier, Wally’s Beverly Hills

"Once again a deft touch of wood can be found on the aromas of resin, pear liqueur and apple. There is very good verve to the nicely detailed if not especially dense flavors that possess more refinement than usual before concluding in a solidly lingering finish. This well-made effort should repay 5 to 8 years of cellaring. "

2012 Massiglia Proprietary Red

Wally's Price: $165

"I have tasted through the wines from Marciano Estate over the last 6 years. I have had great pleasure offering them in our By the Glass program. Its a 'Hidden Gem' you may not of heard of. After a glass and or bottle ordered in the restaurant, more often then not, our guests purchase their new find to take home with them. The 'no compromise' approach from the managing of the vines and vineyard through winemaking 'only the best will do' throughout, Maurice as put together a team of 'rockstars' of likeminded people to help bring his dreams to fruition. People who are as single-mindedly obsessed with quality like the man himself. The 2012 Massiglia is showing beautiful right now. The tannins have softened and the fruit and oak have balanced with the acidity making this a seamless treasure. Very Limited; not to be over looked." -Matthew Turner, Chief Beverage Expert & Concierge

Krug Grande Cuvee 168th Edition NV, Champagne

Wally's Price: $185

"This is my go to champagne for any occasion. It is full bodied, luxurious, and plush with great texture, acidity and minerality. It pairs beautifully with our caviar, cheese and charcuterie, and our whole chicken with truffles. It makes a great gift or date night wine. It is the best Champagne under $200 on the market. "
-Dustin Cassidy: Sommelier, Wally’s Beverly Hills

"One whiff and you know this is serious stuff. The aromas of baking brioche, coconut, candied citrus and leather pick up roasted coffee and grilled nuts on the palate, permeating the senses. Profound depth and complexity, offering a unique Champagne experience"
