Wally’s Fall Menu Has Ingredients That May Surprise You — Here’s Why!

When you’re dining in Los Angeles restaurants this time of year, you may notice a shift in the menus. As summer’s bright ingredients start to go out of season, a new spectrum of flavors starts to emerge.

Rich, fire-roasted vegetables. Hearty, saucy proteins. Creamy, delicious comfort foods.

At Wally’s, our Executive Chefs love to embrace each season, when they shower us with fresh local ingredients. And this fall is no exception.

“As the season progresses and temperatures drop, we keep the kitchen hot,” said Wally’s Beverly Hills Executive Chef Omar Zanders. “I love to showcase richer and deeper flavors this fall to comfort the soul.” 

Which dishes is Wally’s Santa Monica Executive Chef Alan Martinez excited about adding? 

“All of them!” he said. “Overall, we’re incorporating a lot of delicious holiday flavors, like cinnamon, cardamom, star anise, and allspice.”

These flavors find their way onto Wally’s fall restaurant menu in surprising and delightful ways, such as paired with burrata or alongside seafood.

You’ll also find a wonderful array of fresh and local produce across the menu.

“Inspiration always comes from walking the Santa Monica Farmer’s Market,” said Martinez. “Every season I look to the changes in vegetables and fruits to see how we can use them in new dishes.”

Zanders noted that their team works hard to develop close relations with local farmers and source the best proteins. 

Thanks to such great seasonal availability here in Los Angeles, Wally’s is lucky to have plenty of those fresh vegetables and fruits on the menu: baby kale, butternut squash, sweet potato, beets, brussels sprouts, sunchokes, and more. 

“I'm truly excited for all fall menu items as they are simply approachable but elevated and highlight different techniques,” said Zanders.

Fresh Fall Appetizers

The Burrata at Wally’s is always a crowd-pleaser, no matter the season or time of day. But right now, it’s sporting a fantastic fall makeover. At Wally’s Santa Monica, the large round of burrata comes atop a bed of ingredients you’d never think would work together, but amazingly, they do. First, there’s poached quince cardamom marmalade, which delivers a splendid burst of spices and flavor. Then thin slices of Prosciutto di Parma, bringing a rich and savory element. Topped with a sweet-savory pecan and walnut cracker, this dish has great textures and a perfect balance of sweet and savory flavors that are ideal for fall.

The Hamachi Sashimi also received a great fall update. This tender and savory fish gets a burst of seasonal flavor from the addition of sweet potato and plantain chips. Together, the flavors highlight the beautifully delicate fish.

For the veggie lovers, Wally’s Baby Kale Salad is back! We use a mixture of baby kale greens and shaved Brussels sprouts to give it a light and crunchy texture. Poached pears and crispy chickpeas make this dish a perfect fall appetizer. You can also enjoy the Brussels Sprouts, roasted to perfect tenderness and glazed in a sauce that Zanders says “takes normal sprouts to the next level.” 

Mouthwatering Entrée Additions

“I woke up one morning with a carnivorous idea,” said Wally's Santa Monica Executive Chef Martinez. “What if we came up with a new way to cook the bone marrow?”

This idea led Martinez to create Wally’s brand-new Bone Marrow Brûlée. He roasts it in the wood oven along with beef jus to create a beautiful, caramelized sauce, which is served with thick slices of grilled country bread.

This season also brings the return of favorite fall menu dishes everyone will be excited about. We welcome back the Seafood Risotto to Wally's Santa Monica, with a decadent combination of lobster, shrimp and octopus mixed with flavorful saffron. When you’re in need of a wonderful comfort food, the Winter Squash Cacio e Pepe is just what the doctor ordered. We start with house-made shells and top with them roasted butternut squash ragout and pecorino pepato for the ultimate creamy and delicious pasta.

There’s also the tender and juicy Colorado Lamb Duo, a plate of delicate lamb chop and leg of lamb croquette with saucy root vegetables. From the sea, Wally's Santa Monica guests can enjoy the Miso Black Cod, a delicate white fish glazed with a sweet umami sauce with refined yet powerful flavors. And finally, the Diver Scallop returns to all locations for the fall season, this time with a lovely sweet potato chowder and roasted sunchokes. 

A Fall Refresh of Familiar Dishes

Throughout the year, our chefs like to keep familiar favorites on the menu so you can always count on enjoying them when you come in. As the seasons change though, we give those dishes a seasonal update to incorporate new ingredients that become available. We’re excited to share the latest changes to some of our favorite dishes on the fall menu.

Wally’s Steak Tartar is still made with our signature Wagyu Steak, but we’ve updated the aioli with charred leeks and topped it with crispy shallots. Now each bite has a beautiful, crave-worthy flavor.

Our Grilled Octopus still flaunts that delicious chorizo spice on grilled Spanish octopus. But now, it’s served with spiced golden potatoes and olive-fennel chimichurri, giving the whole dish a fantastic kick of flavor.

Meanwhile, our all-time favorite dish, King Salmon, has received a robust update. The tender, rich salmon is crusted with herbed pistachios and accompanied with celery root and glazed parsnips, all topped with Meyer lemon jus.
